Pecan-crusted Chicken Breasts

12 oz chicken breasts, boneless, skinless (cut into three pieces)3 oz light cream cheese1 tbsp butter (unsalted)1 1/4 cup pecans, chopped, divided1/2 cup seasoned croutons1/2 tsp saltseasonings to taste: cinnamon, onion, garlic, basil
Preheat oven to 400 degrees. Mix softened cream cheese and butter with about 1 cup finely chopped pecans, salt, and seasonings. Flatten chicken to 1/2 inch thickness. Spoon 1/3 of cream cheese mixture on each chicken breast piece. Crush croutons in a bag or chop in a food chopper until crumbs. Mix crouton crumbs and about 1/4 cup finely chopped pecans. Spread crumb mixture on a plate. Roll up chicken pieces to enclose cream cheese. Press chicken in crumb mixture on each side, coating with a layer of crumbs. Place chicken on a baking sheet and bake for about 25 minutes or until chicken is no longer pink.
