Salmon with Feta and Pasta

Ingredients
12 ounces fresh or frozen skinless salmon filets2 1/4 cup or 8 ounces whole wheat pasta2 cloves or garlic, mincedNonstick cooking spraySalt4 large tomatoes, chopped1 cup sliced green onions5 sliced olives3 tbsp snipped fresh basil1/2 tsp coarsly ground black pepper2 tsp olive oil1/4 cup feta cheese
Directions
Rinse fish, pat dry. Cut into 1 inch pieces.

Cook pasta according to directions on box.

Lightly coat a large nonstick skillet with cooking spray. Heat skillet over medium-high heat. Add garlic. Cook and stir for about 15 seconds. Lightly season fish pieces with salt. Add fish to skillet.

Cook fish for 4 to 6 minutes or until fish flakes easily when tested with a fork, turn fish pieces occasionally.

Stir in tomatoes, green onions, olives, basil, and pepper. Heat through

In a large bowl, toss together hot pasts, olive oil, salmon mixture, and cheese.

    This recipe is a great way to combine healthy protein, preferred carbs and a tasty variety of dairy and vegetables. I opted for some smoked salmon and thought it added a wonderful dimension to the flavors. Will definitely keep this for entertaining my pescatarian friends.
