1 Tbsp olive oil or coconut oil1 Tbsp unsweetened applesauce1 egg 1/2 cup milk 1 Tbsp honey1/4 teaspoon salt 1/2 tablespoon baking powder 1/2 cup whole wheat flour plus 2 Tbsp.1/3 cup protein powder1/4 cup flax seed meal
In a large bowl combine the oil, applesauce, egg, milk, sugar and salt. Mix it very well with a fork or wire whisk. Measure in the baking powder, protein powder and flours. Mix again until all of the dough particles are moistened. Do not over mix. Spoon the batter into 6 well oiled muffin cups. Bake at 400° for about 15 minutes. Remove from the oven and cool slightly before removing from the pan.
