Graham's Shrimp Pasta

Ingredients
The amounts/quantity are estimates. I usually play it by ear when making this, as sometimes it is just me and 2 others, and sometimes it is just me and 4 others! I also use raw jumbo shrimp (called prawn) from our local seafood market - I buy in bulk and they freeze really well! Because they are so big - I usually go with 3 per person. The Olive oil is extra virgin - and WORTH EVERY DROP!! Next time I make it - I will upload a photo!
Directions
Prepare your pasta.
While your pasta is bioling, cut onion and peppers into strips. Put butter sub. in pan to melt - spread all around to coat pan. Put onions, peppers and snap peas in pan. Saute about 5-7 minutes over Med. heat. Put peeled raw shrimp into pan - add white wine and lemon juice. The shrimp only needs about 3 minutes on each side - when they turn pink all over - remove from heat. Drain pasta.
Dump everything into a big bowl (I usually use the pasta pot.) Sprinkle seasonings and stir to cover. Drizzle Olive Oil and stir to coat. The pasta is a guesstimate - use only what you need to feed your family! Even though it is tempting - don't add any more Olive Oil - a little goes a long way! I hope your family enjoys this as much as mine does! Please let me know what you think! This usually makes about 3-4 servings for my family - my littlest one doesn't eat the shrimp - just the pasta and peas.
