Eggplant Hummus with Flat Bread

Ingredients
1 Ea Eggplant, Large2 T Lemon Juice1 t Cumin, Powder1 Ea Garlic Clove, Chopped1 T Olive Oil1/2 t Sea Salt1 Ea Pita cut in 8 wedges (or your favorite flat bread)5 Ea Green Olives1 Ea Pickled Jalepeno
Directions
For the Eggplant Hummus
Preheat oven to 350 degrees, place eggplant on a sheet pan and roast until tender, 35 - 50 minutes, cool. When cool, scoop out flesh and place flesh in a food processor with the lemon juice, cumin, garlic clove, olive oil, and sea salt, puree until smooth 1 - 2 minutes.
Makes about 1 Cup

Place 1/2 C Eggplant Hummus in a bowl, set on a plate, arrange 4 slices of flat bread, 5 olives, and 3 slices pickled jalapenos, garnish with fresh herbs, sit back, and enjoy.
