Loreen's Protein Pancakes

Ingredients
1 can organic pumpkin2 cups old fashioned, large flake oats1 cup oat bran1 cup Naturegg Simply egg whites (or 8 egg whites)2 large organic eggs5 servings protein powder( I used 3 chocolate & 2 vanilla)1 tbsp carob4 tsp unsweetened coconut (Bob's Red Mill)4 tsp vanilla extract1.5 tsp cinnamon1/2 tsp nutmeg1/4 tsp cloves1/4 tsp ginger
Directions
Makes approximately 20 pancakes, about 2 inch in diameter

Combine all ingredients and cook as you would normal pancakes. Takes about 2 or 3 minutes per side at medium high.
Top with Banana Almond Butter Sauce and fresh or frozen berries.
To make sauce, mash 1/4 banana with 1 tbsp almond butter, cinnamon and a splash of almond milk. Mix well until consistency of heavy cream (adding milk as necessary).

Also great as a cold snack as is!
