In bowl combine:2 egg whites1/2 cup applesauceSet asideIn a larger bowl combine:1 cup wheat flour3/4 cup splenda1/4 tsp salt1/4 tsp cinnamon1/2 tsp vanilla1/2 tsp baking soda1 generous cup of mashed mango's1/2 cup walnuts or macadamia nuts (optional)
Mix the wet and dry ingredients together and put into a greased loaf pan. Cook in a 350 degree oven for 50 minutes. Take out of oven when toothpick comes out clean. Place on wire rack to cool.

This bread is absolutely phenomenal!!! I must admit that I didn't have any Splenda or applesauce on hand. Also only had 1 egg. I used 1/2c sugar, the equivalent amount of mango instead of applesauce, and 1 whole egg. I upped the amount of baking soda & added 1/4tsp baking powder to help it rise. - 6/16/12
