Cheese Fondue

Ingredients

1 Cup each cheese-use lite cheese when available3/4C Sauterne wine2T flour1/4t nutmeg1/2t pepper1t sea salt2 clove garlic, chopped
Shred or dice each cup of chesses. Add dry ingredients and mix. I use a ziplock bag. Spread garlic in bottom and sides of fondue pot with fingers. Add wine and cheese to pot and turn on high, stirring regularly until melted. Should get to a creamy thick consistency. Reduce temp accordingly.
If you are using a fondue pot that does not get real hot, melt ingredients on the stove and pour into pot only to keep it warm.
To add bite to the recipe add 2T Kirschwasher. Some people are not fond of Kirsch tho.
