Pinto Bean & Ham Soup

Ingredients
Bush's Pinto Beans, 2 15 oz cans drain and rinse Ham, extra lean, (5% fat), 1 cup, diced Onions, raw, .5 cup, sliced Peppers, sweet, red, fresh, 1 medium (approx 2-3/4" long, 2-1/2" choppedCarrots, raw, 2 large (7-1/4" to 8-1/2" long) SlicedPotato, raw, 1 cup diced Knorr Vegetable Recipe Mix 2 tbsp or 2 cubes Knorr Tomato Buillon cubes.Garlic, 1 cloveGarlic powder, 1 tsp Onion powder, 1 tsp Pepper, black, 1 dash Canola Oil, 1 tbsp 2.5 cans of water (use the bean cans)
Directions
Serves 6

Dice onion, garlic, ham, red pepper, potato & carrots saute in 1 tbsp of canola oil. Once translucent add pinto beans make sure you drain and rinse them (gets rid of the extra sodium) add 2.5 cans of water. Add Knorr soup base, garlic and onion powder & pepper. let simmer for 20 mins until carrots and potatoes are cooked.

Serve with corn bread or brown rice.
