San Francisco Chops

4 pork loin chops, (1.5lb) trimmed fat1 tbsp olive oil1 garlic clovesauce2 tbsp olive oil4 tbsp sherry4 tbsp soy sauce1 tbsp splenda brown sugar1/4 tsp crushed red peppers2 tsp cornstarch2 tbsp water
Heat oil in skillet, brown chops
remove and add a little more oil if needed.
saute garlic, do not burn.
combine oil, sherry, soy sauce, brown sugar, and red pepper.
Place chops in skillet. pour sauce over chops, cover.
simmer on low until chops are tender and cooked through, 30-35min.
add a little water if needed to keep sauce from cooking down too much.
turn once.
remove chops to platter. stir in cornstarch dissolved in water. cook until thickened.
Pour over chops and serve.

My wife cooks better than I do but I followed this recipe and doubled it for us. I served it with broccoli florets and garlic mashed potatos. I am not a spice lover but the wife is and we were both happy. next time I may use a little less brown suger splenda and a bit more crushed red pepper. - 3/15/11
