Mother's Fried Rice

4 c. white rice4 pork chops4 stalks celery, slivered4 carrots, slivered8 green onions, chopped1 1/3 can bean sprouts or bamboo shoots, drained8 oz. fresh mushroomsSmall can water chestnuts, drainedSoy sauce (gluten free)4 eggs4 T. olive oil (or other cooking oil)
Cook white rice. Bake pork chops. Cool and refrigerate rice and pork chops till next step. Cook and braise in oil,slivers of celery, carrots, green onions, and bean sprouts (or bamboo shoots). Add sliced fresh mushrooms and sliced water chestnuts. Next, add handful of pork (cut up) and rice at a time. Sprinkle with soy sauce and salt and pepper every third handful of rice and pork. Scramble the eggs separately and add to fried rice just before serving.
