4 oz dry whole wheat rotini1 cup carrot slices1 cup zucchini slices2 cup fresh baby spinach leaves1 cup black beans, rinsed1 lb. red potatoes, sliced4 Tbsp olive oil mayonaisse1 cup Mexican four cheese blend shreddedSeasoned salt to taste (optional)
Serves 6
Boil rotini in water according to directions on package and then cover bottom of baking pan (9 x 13)
Steam carrots, zucchini, spinach and potato slices together for about 45 minutes until soft.
Pour carrots, zucchini and spinach on top of rotini, add the black beans on top, then arrange potatoes on top of beans. Spread mayonaisse on top of potatoes then sprinkle shredded cheese on top. Broil on low for about 15 minutes until cheese is melted and crunchy brown.
