Green Pea Casserole

2 cups frozen green peas1 recipe cream of something soup1 medium onion, diced1/2 cup 2 % reduced fat cheddar cheese1/4 cup wheat germ1 Tbsp butter1 (5 oz) can water chestnuts, drained (optional)1 (2 oz) jar pimentos, drained (optional)
Lightly grease a 1 1/2 quart casserole. Saute onion unitl slightly tender. In a medium bowl, combine the sauted onion, peas and cream of something soup (Mix in the water chestnuts and pimento too, if using them). Pour into casserole dish and top with cheese. Melt butter and combine with the wheat germ. Spread this over the cheese. Bake @ 375 for about 25-30 minutes. Makes 4 main dish servings or 6 side dish servings.
