Toasty Zucchini

1 medium or large zucchini2t kosher salt1t fresh ground pepper4T Parmigiano-Reggiano cheese, fresh grated from wedgedrizzle of olive oilcooking spray
Lightly spray a half-sheet pan, jelly roll pan, or cookie sheet. Cut ends of zucchini off and then cut zucchini in half or thirds, depending on size. Each piece should be aroudn 2.5' long. Next, slice the zucchini the long way, and thinly, about 1/8 of an inch. Lay each slice down on sheet pan. Once all the slices are down, sprinkle lightly with salt and pepper. Next add the parmigiano. Finally, drizzle olive oil very lightly over the whole pan.
Put oven rack in the upper slot, but not the top one. Turn broiler on high and put sheet pan in. Broil until the tops are golden brown. let cool, plate and serve.
