Black Bean/Tomato Chili with Chicken

1 tbsp Olive Oil11/2 cup chopped onions3 tsp. garlic, or more to taste1tsp. cumin2 cans diced tomatoes, not drained2 cups cooked, chopped chicken breast (I baked it with cajun seasonings)2 cans black beans, drained and rinsed1 tsp crushed red pepper, if desired
Heat olive oil in a large saucepan or dutch oven. Add onion, cook for approximately 5 minutes or until tender, stirring occasionally. Add garlic and cumin, cook for 2 more minutes. Add remaining ingredients plus 1 can of water. Bring to boil, cover and simmer over low heat 20-30 minutes before serving.
