Banana Chocolate Chip Muffins

Ingredients
Sift together:1 and ¼ cup all purpose flour2 and ¼ teaspoons baking powder½ teaspoon saltblend until creamy:1/3 cup shortening2/3 cup sugar¾ teaspoon grated lemon rindbeat in 1 or 2 beaten eggs1 to ¼ cup ripe banana smashed up
Directions
sift together flour, baking soda and salt

blend earthbalance or shortening and sugar. add eggs and mashed banana.

Mix in dry ingredients and add chocolate chips or nuts if desired.

Spoon into muffin tins and bake at 400 degrees for about 20 minutes or until done.

makes 11 regular sized muffins
