Chickpea Stew

Ingredients
olive oil4 cloves garlic1 sweet onion (medium size)3 cups chickpeas1 can petite diced tomatoes2 Tbs Harissa1/2 block frozen spinach (5 oz)marjoram, garlic powder, turmeric, ginger, coriander, and fenugreek to taste (roughly 1/4-1/2 tsp of each)2 Tbs lemon juice1/4 Cup coconut water
Directions
Heat olive oil over medium-low until a sprinkle of water sizzles in your saucepot. Add garlic and onion and saute until golden, about 3-5 minutes. Add tomatoes and simmer 5 minutes. Add chickpeas and increase heat to medium-high. Add spinach and stir until combined. Reduce heat to low and cover pot. Cook ten minutes, then add spices. Cook an additional ten minutes, then stir in coconut water and lemon juice. Simmer three minutes. Adjust spices as needed, and serve.

Serve family-style with a fluffy rice such as jasmine or basmati. Creates roughly 4 bowls of stew.
