Guacamole

Ingredients
4 ripe avocados1 T lime or lemon juice (not needed if you don't have it)1 tsp salt (to taste)2 cloves garlic, pressed
Directions
Cut avocados in half and remove the seed by imbedding the blade of a knife in it, then just lift out and remove seed from knife. Scoop out fruit from skin and discard skin. Mash avocado lightly if you want chunky or more if you like smooth. Add remaining ingredients and mix in, mashing until it's the consistency that you like.
This can easily be done in a kitchenaid mixer too, since it's best made immediately before eating. I put the garlic, lime juice and salt in the mixer bowl, then just before guests are due to arrive, scoop out the avocado into the bowl, turn mixer on until proper consistency, adjust flavors, voila.
