Ingredients
2 egg whites1/2 tsp cinnamon1/8 tsp vanilla extract
Directions
Whisk all ingredients in a mixing bowl. Preheat a non-stick skillet pan and pour in the mixture as a pancake. Cook over medium-high heat until the bottom is gold brown, then flip and repeat with other side.

Good if you put sliced peaches in it before you roll onto your plate.

    Thanks for posting this. I usually add 1 packet of splenda. It gives it a liitle more flavor. I also use liquid egg whites. I'm going to have to try and add the peaches. I was looking to add something to the receipe that I use. - 7/29/10

    I made this and was not impressed. I thought it was too eggy and nothing like crepes. I would sudgest to people to try it if you like a more egg taste and texture. - 10/10/07
