5 tablespoons ground almonds9 ounces tofu1 cup water, or vegan chicken-style bouillon cube1 Tbsp soy sauce3 Tbsp mild vegetable oil1/4 cup finely chopped onion1 Tbsp nutritional yeast2 tsp dried sage leaf1 tsp minced fresh garlic1 tsp freshly ground black pepper1/2 tsp tumeric1/2 tsp smoked paprika1/4 tsp dried thyme leaf1 cup plus 3 Tbsp wheat gluten
1. If you’re starting with whole almonds, grind them in the blender first while it’s still clean and dry, then remove and set aside.
2. Crumble the tofu into the blender. Add the soy sauce, then add 1 cup water. Add this to the blender.
3. Add remaining ingredients to blender EXCEPT gluten. Blenderise until completely smooth. Empty into a large mixing bowl.
4. Add gluten and mix until evenly combined. You’ll have a soft dough.
5. Turn out onto the countertop and form into a log. Wrap in parchment paper and then in triple layer aluminium foil. Lightly twist the ends together and tie with a couple pieces of string.
6. Bring water to boil in a pot that has a steamer insert. Steam for 1 hour. Then turn off steamer and let stand in there for 2 hours.
This recipe makes 1 1/3 pounds of vegan deli meat at a significantly cheaper cost than the kind you buy at the store.
