Chickpea Salad

Ingredients
- 1 can garbanzo beans (chickpeas)- 2.5 tbsp reduced fat mayo- 1/2 tsp. italian seasoning blend- 1/4 tsp. cumin- onions or celery (optional)- onion powder (a few shakes)- 1 tsp. dijon mustard
Directions
Mash chickpeas with fork, add everything else, and stir. makes about 3 servings.

    To make this vegan, I used veganaise instead of mayo. I used a little less of the veganaise, and added a small amount of pickle relish and left out the Italian seasoning and cumin. Wonderful! -- and a welcome change from humus! - 10/19/07
