Ingredients
2 cups Watermelon, seeds removed1/4 cup Walla Walla sweet onion3/4 cup canned Black beans, drained & rinsed1/4 cup chopped seeded Anaheim peppers(Recipe calls for Jalapeno chilies - too hot for me)1/4 cup fresh Cilantro, washed & stemmed1 large clove garlic, finely chopped1 tablespoon brown sugar1/2 teaspoon salt
Directions
Stir together all ingredients in bowl. Refrigerate, covered at least 1 hour to blend flavors. Stir before serving. I like to make it the night before and have it ready to eat at dinner time.
