Hearty Pea Soup

Ingredients
1 onion, diced2 T. olive oil1 bay leaf1 c. green split peas1/4 c. pearl barley8 cups water2 t. salt1/4 t. white pepper1 carrot, peeled and grated3 stalk celery, diced1/2 c. parsley1 white potato, skin on, grated1/2 t. basil1/2 t. thyme
Directions
Saute onion in oil until soft, add bay leaf. Stir in peas and barley. Add water and bring to a boil. Cook on low heat, partially covered, for about 90 minutes. Add salt, pepper, vegetables, and herbs. Turn heat down as low as possible. Simmer another 30 to 45 minutes, stirring at 10 minute intervals. Thin with additional water of stock as needed.

Makes about 8 1-1/2 cup servings.
