Cheesy Mashed Cauliflower

1 bag Kroger frozen cauliflower1 wedge Laughing Cow Light Creamy Swiss Original Cheese 1/4 cup Kraft Mild Cheddar Cheese - fat free shredded 1/2 cup Skim Milk2 tbsp Fat Free Sour CreamSalt and pepper to taste
First put the cauliflower in the microwave for about 8 minutes to cook/steam it. I left it in the bag.
Once cooked, add cauliflower and shredded cheese and milk into a blender. Blend until smooth.
Transfer to a pot on the stove and cook on low. Add the wedge of Laughing Cow Light and the sour cream, salt and pepper to taste. Continue to whisk or stir and let thicken.
