Pork with Garlic & Peppercorns - Moo tod kratiam prik thai sod

Ingredients
2 Tablespoon oil 2 large garlic gloves, finely chopped110g (4oz) lean pork, finely sliced1 Tablespoon fish sauce1 Tablespoon light soy sauce1 Tablespoon dark soy sauce4 tablespoon meat stock or waterPinch of ground white pepper10 fresh peppercorns (I put them in a pestle and ground abit)
Directions
In a wok, heat oil until a light haze appears.
Add garlic and fry until golden brown.
Add Pork and cook briefly, stirring constantly. Add the remaining ingredients one by one, stirring briefly between each addition. By now the pork should be cooked through. Turn the heat up for a few seconds to reduce the liquid to about 3 tablespoons.

Turn on to serving dish and serve.
** great with beef as well.
