3 Fillets of Pink Pacific Salmon (or 1 1/2 lbs)1 1/3 Cup Sun-dried Tomatoes in oil, slivered1 Tbsp Oil from Sun-dried Tomatoes2 Cloves of Garlic1 Cup of Sliced Mushrooms1/2 Bunch of Asparagus (approx. 10 spears), cut into 1" pieces1/2 Cup Sliced Green Onions1/4 Cup Chopped ParsleyPinch of Salt & Black Pepper flavoured to taste
Heat a large non-stick skillet over medium-high heat; add sun-dried tomatoes, oil and garlic, and saute for 1 minute. Add the mushrooms and asparagus and cook, stirring often, for 2-3 minutes. Add salmon and green onions; saute another 5-7 minutes. Stir in parsley and add salt and pepper to taste.
