Turkey Veggie Meatloaf (Gluten free)

2 pkg (20oz each) Ground Turkey Breast1 cup frozen green peppers & onions mix1 egg, beaten2 egg whites, beaten1 cup gluten free oats (bobs red mill)1 cup SImply heinz ketchup 2TB parsleysalt & pepper to taste2TB pureed carrots (use baby food puree, optional - used instead of adding brown sugar to add sweetness)olive oil cooking spray
Makes 8 thick slices
Preheat oven to 350. Mix all ingredients together, saving 1/4c of the ketchup for the top. When all ingredients are well blended, pour into a loaf pan sprayed with olive oil cooking spray. Press into pan & top with ketchup. Bake for 1 hour, 10 minutes, and let it cool before cooking.
