Blueberry Vanilla Protein Pancakes with Peanut Butter

Ingredients
1/4 c. Quaker Oats1/4 c. Liquid Egg Whites (2 egg whites)1/4 scoop Vanilla Protein Powder2 oz. Blueberry Greek Yogurt (could also use vanilla or any other flavor)1 tsp. Vanilla Extract1/4 packet Truvia or 1 packet splendaCinnamon to tasteTop with:1/8 cup Blueberries1 Tbsp. Natural Peanut Butter
Directions
Combine all ingredients, spray skillet with cooking spray. Cook over medium-high heat. These will be slightly runny when pouring into the skillet at first. Wait about 5 seconds, then spread the oatmeal evenly throughout the pancakes to the edges. (It kind of globs up in the middle) And then cook like normal pancakes.
Top with Natural PB and blueberries (or strawberries, any berries)

    I made this with plain greek yogurt and no blueberriers. They are the best protein pancakes I have had so far. I make mine in advance and will definitely make these again.

    BTW, I put all the ingredients in a blender and they cooked fine, just like normal pancakes. - 1/15/13

    Can't make up my mind about these pancakes. The consistency is what I'm struggling with. Trying to venture out and try new things - will try again :) - 5/6/11

    I use the quick oats, I don't know if that makes a difference or not, and I do use a skillet to cook them- you have to make sure they're not too thick.. but consistency will probably always be an issue when using oats instead of flour.. :-\ Hope you can find something that works for you!
