Buttermilk Pancakes

Ingredients
1 cup flour2 tbsp sugar1/2 tsp baking soda1/2 tsp salt1 cup buttermilk2 tbsp melted butter or oil1 eggsyrup
Directions
Sift flour, sugar, baking soda and salt together. In large bowl, whisk buttermilk, oil and egg. Gently fold flour into buttermilk. Do not overmix - batter should have pea size lumps. Preheat griddle. Ladle 3-4 tbsp batter for each pancake onto griddle and cook until golden brown and holes begin to appear on top. Turn and cook second side. Serve immediately with butter and syrup.
