Ratatouille

Ingredients
1 Zucchini, chopped1 Egglplant, peeled and cubed1 Onion (which ever kind you prefer white, red, etc) chopped1 lb of mushrooms, chopped1 cup of cherry tomatos1 sweet red pepper (bell pepper) chopped4 cloves of garlic, minced2 tbsp Olive Oil2 tsp Italian Seasoning
Directions
You will need a pretty big pan. In a pan, saute the 1 chopped red pepper, 1lb mushrooms, and 1 chopped onion in 2tbsp olive oil for about two minutes till they start to soften. It won't take very long. Now dump in everything else (eggplant, zucchini, garlic, seasoning, and tomatos) and continue sauteing for about 10 minutes.

You can eat by itself, as a side dish, or over pasta. Very tasty and easy :)
