Creamy Chicken Stew

2 lbs boneless chicken breast4 cups carrots chopped ( or baby carrots)4 meduim gold potatoes diced1 onion chopped2 tsp thyme3 cups chicken broth1 cup non fat evaporated milk1/4 cup flour
heat large pan and spray with cooking spray saute carrots and onions just to soften add whole chicken breast broth thyme salt and pepper to your liking. simmer for 30 min add potatoes simmer an additional 30 min or until potatoes are cooked combine evap milk and flour slowly stir into soup simmer for a few.
***SPECIAL NOTE YOU CAN TOSS EVERYTHING INTO A CROCK POT RAW EXCEPT FOR MILK AND FLOUR COOK ON LOW FOR 7 -8 HOURS THEN MIX MILK AND FLOUR AND ADD TO BROTH TURN CROCK POT TO HIGH REMOVE LID AND LET COOK AN ADDITIONAL 15-20 MINUTES TO THICKEN
