Cacciatore Chicken

1 tbsp Olive oil3 Chicken breat, no skin, no bone1 cup, Chicken broth1 Bay leaf1 cup Onion, chopped1 cup Mushrooms, sliced1 cup canned tomates2 tbsp, White wine (optional)Thyme, parsley, salt, black pepper, as desired
Heat oil in pan and brown chicken breat on all surfaces.
Stir in broth and bay leaf and and let simmer until fully cooked.
In same pan, cook oniuon and mushrooms for a few minutes.
Add tomatoes, wine and seasonnings.Let simmer for 10-15 minutes
Take bay leaf out and serve.
