Blackened Walleye (Pickerel)

4 tbsp paprika3 1/2 tsp chili powder2 tsp onion powder1 tsp dried thyme leaves1 tsp dried oregano leaves1 tsp garlic powder1 tsp white pepper1 tsp salt1 tsp black pepper1 tsp cayenne1 lb. (16oz) walleye or pickerel fish1/4 cup margarine
Mix first 10 ingredients together. This recipe makes enough seasoning for four medium-sized fillets.
Heat a large skillet over high heat, so it is very hot. Rinse the fillets and pat them dry. Melt the margarine in a saucepan. Brush each fillet with the melted margarine and generously coat each fillet with blackening spice mixture.
Drop fillets into the pan after pouring the remaining margarine into the hot pan. Turn the fillets once and cook until the fish flakes with a fork. Cooking time varies from two to six minutes, depending on the thickness of the fillets.
You can cook the fillets outdoors as the blackening spice may create billows of thick smoke that can fill the house if there is no fan above the stove.
