Jose's Healthy Cheesy Canadian Bacon Omelet

Ingredients
2 whole pieces of canadian bacon, cut into bite size pieces1/8 cup 2% milk Cheddar & Monterey Jack cheese1/2 cup liquid eggs1 small red pepper (approx. 2 tablespoons)1 small yellow pepper (approx. 2 tablespoons)1/8 cup canned muschroom pieces1/2 Roma tomato, chopped
Directions
1)Spray small nonstick skillet with low fat cooking spray.
2)Heat pan to medium high and add liquid eggs. Cook until egg starts to bubble.
3)Place Canadian bacon on half of the omelet.
4)Add all vegetables and top with cheese on the same half of the omelet.
5)Once the plain side of the omelet is slightly brown (approx. 1 minute), flip over to fold the omelet in half. Cook till desired consistentcy.

Makes 1 serving.
