Ingredients
# *Flour, white, 2 cup # Egg, fresh, 2 large # Milk, 2%, 2 cup # Salt, .5 tsp # Butter, salted, 1 tbsp
Directions
Makes 10 single-crepe servings. (3 are a large breakfast)

Combine flour, beaten eggs, milk, and salt, all at once, and whisk until no large lumps remain.

Melt 1 tsp. butter in a large (more than 12") skillet and heat.

Add 1/3 c. of batter to skillet, and immediately lift skillet and tilt, rotating in a circle to spread the batter out into a thin circular shape.

Cook over medium heat until the top is no longer "wet"-looking. Flip, using a spatula. Cook a few moments longer. When done, both sides should have light brown spots on them.

Use the fillings of your choice (not included in calorie count). Cinnamon and sugar is traditional. Also tasty is fruit with cheese, or cream cheese with jam, or cheese with ham.
