Fresh Peach Genoise

Ingredients
*Peaches, fresh, 3 medium dicedButter, unsalted, 4 tbsp melted and cooledGranulated Sugar, .5 cup Egg, fresh, 4 medium divide*Flour, white, 1 cup
Directions
Preheat oven to 350

Grease a round 9in cake pan. Place half the peaches in the pan in a single layer.

Whisk egg yolk and sugar (minus 2 T) to yellow ribbon.

Whisk egg white to soft peak. Add 2 T sugar and whisk to stiff peak.

Fold in half egg whites with egg yolks. Fold in flour and thin butter.

Fold in remaining egg whites.

Pour batter in pan over peaches. Cook in oven for 15 min. Turn oven off. Top with remaining peaches. Put back in oven (that is off) for 30-40 min until cake has finished cooking.
