Apple Pancakes

Ingredients
3 Granny Smith apples (cored and peeled)1/2 cup quick cooking oats5 egg whites1/2 cup light soy milkLemon juice
Directions
Preheat oven to 350* F.
Heat skillet over medium heat and coat in cooking spray.
Thinly slice the apples.
Squeeze a bit of lemon juice over them (to prevent discoloring) as you go because this might take a while.
Scatter the slices in the skillet and cook for about 10 minutes or until they become tender, but not falling apart.
In a blender, process the oats until they become fine.
Add the egg whites and the milk.
Blend again to combine.
When the apples are finished pour the batter into the skillet and place it in the preheated oven.
Bake for about 15 minutes.
Sprinkle a little cinnamon and sugar on top to make this ultra-special.

    I made mine in ramekins. Left the skins on, added cinnamon and nutmeg to the apples that I cooked in the microwave. I also don't use soy so had to use skim milk. I love this idea and was very excited to see it! I had to cook it about 25 minutes though, it seemed really soupy. Needs more flavor. - 2/5/11
