Creamy Potato Bake

* *Potato, 1kg (6 medium (2-1/4" to 3-1/4" dia.)) * Light Cream (coffee cream or table cream), 300 mL * Milk, 1%, 166 mL * Garlic, 1 clove, peeled and crushed * Salt, 0.75 tsp * Cheddar Cheese, 100 grams
Preheat Oven to 392 °F
Stir cream, milk and garlic in a medium bowl.
Peel potatoes, and slice into 3 - 4 mm thick slices. Layer potato slices in a 2.7 quart capacity baking dish, seasoning with salt between layers.
Pour cream mixture over potatoes.
Cover the baking dish tightly with aluminum foil.
Bake for 1 hour 15 minutes, or until potato is tender when tested with a knife. Discard foil.
Increase oven temperature to 428 °F
Sprinkle potato with grated cheese. Return to the oven, and bake for 15-20 minutes, or until cheese is melted and golden.
Allow to stand for about 20 minutes before serving.
