Indian Lamb Burgers

Ingredients
1.25 lb ground lamb1 T EVOO3/4 cup finely chopped onion1/4 cup finely chopped shallots2 T minced garlic3/4 t ground cumin3/4 t ground coriander1/4 t ground cardamom1/4 t ground mustard1/4 t ground turmeric1/8 t ground red pepperNutmeg to taste1 T finely chopped fresh mint
Directions
Heat oil in a medium nonstick skillet over medium heat. Add onion and shallots; cook until onions are golden, stirring frequently.
Stir in garlic, cumin, and next 6 ingredients (through nutmeg); cook 1 minute.
Remove from heat; cool to room temperature.
Combine onion mixture with lamb, breadcrumbs, and mint.
Divide mixture into 6 patties.
Cover and chill until ready to grill.
Grill to desired degree of doneness.
