Ingredients
Imagine Organic, No-Chicken Broth, 2 cup (remove)*Better Than Cream Cheese (non-hydrogenated) [Tofutti], 6 tbsp (remove)Onions, raw, .5 cup, chopped (remove)Garlic, 4 tsp (remove)Italian Season Mix, Dry, 3 tsp (remove)Pepper, black, 1 tsp (remove)Salt, 1 tsp (remove)Shrimp, cooked, 16 oz (remove)Artichokes, frozen, .7 package (9 oz) (remove)*365 Sun Dried Tomatoes - 6 pieces, 1 serving (remove)*Ancient Harvest Traditional Whole Grain Quinoa, 1 serving =.25 cup dry, 2.5 cup (remove)
Directions
Precook quinoa according to package instructions.
Saute onions until clear, add broth, seasonings and tofutti. Stir until mixture simmers. Remove from heat.
Toss together, artichoke hearts, diced tomatoes and quinoa.
Gently stir in broth mixture. Serve warm or cook in bell peppers, approximately 40 minutes.
