Sweet Chicken Curry in a Hurry using Leftover Chicken

2 cups cooked chicken chopped1 small onion chopped2 cups zucchini diced4 canned peach halves (low calorie) diced1 1/2 oz box (40 grams) raisins or sultanas1 cup diced cooked or frozen carrots14 oz (400 gram) can of diced tomatoes1 small banana diced2 tblspn fruit chutney (I used mango)I garlic clove minced2 tsp curry powder1 tblspn Splenda1/2 cup water1/2 cup brown rice
Cook rice and set aside.
Saute onion, garlic, zucchini and carrot until soft, add curry powder and cook until aromatic. Add tomatoes, chutney and raisins (sultanas) and simmer for 5 minutes, add peaches, water, Splenda and banana and cook for a further 5 minutes. Add cooked chopped chicken and cook for 5 minutes until heated through.
Serve with brown rice.
