Orange Chocolate Chip Bread

Ingredients
4 teaspoons grated orange peel (about 1 medium orange)1/3 cup orange juiceBoiling water2 cups all-purpose flour1 cup sugar1 teaspoon baking powder1/2 teaspoon salt1/2 teaspoon baking soda1 egg2 tablespoons butter, melted1 teaspoon vanilla extract1 cup (6 ounces) semisweet chocolate chips
Directions
Place orange peel in a small bowl. Pour juice in a measuring cup; add enough boiling water to measure 1 cup. Pour over orange peel; let stand for 10 minutes.
Meanwhile, in a large bowl, combine the flour, sugar, baking powder, salt and baking soda. In another bowl, whisk the egg, butter, vanilla and reserved orange mixture. Stir into dry ingredients just until moistened. Fold in chocolate chips.
Pour into a greased 8-in. x 4-in. loaf pan. Bake at 350° for 55-65 minutes or until a toothpick inserted near the center comes out clean. Cool for 10 minutes before removing from pan to a wire rack. Yield: 1 loaf (16 servings).
