Cranberry-Almond Granola Bars

2 1/2 c oats2 c whole wheat flour1 1/2 t baking soda1/2 c brown sugar3 T ground flax4 scoops protein powder, vanilla flavored1 1/2 t cinnamon1 t nutmeg1/2 c honey3/4 c + 2T unsweetened applesauce2/3 c nonfat milk1c dried cranberries, unsweetened1c almonds
Preheat oven to 350* and coat a large jelly roll pan (cookie sheet) with nonstick spray.
Combine all dry ingredients, except almonds and cranberries, in a large bowl.
Mix wet ingredients in another bowl and then add to dry ingredients.
Once they are combined, stir in cranberries and almonds.
To press the mixture into the pan without making a mess, use plastic wrap. Spoon the mixture onto the pan, cover the pan with plastic wrap, and press the dough into place .
Before baking, use a spatula (sprayed with nonstick spray) to cut the mixture into bars. Bake at 350* for 20 minutes for chewy bars, longer for harder bars. After baking, cut and remove the bars to finish cooling. Leaving them in the pan may cause them to stick.
Makes 30 bars, approx. 2"x3"
