Potato Herb Omelet

Ingredients
1 tsp olive oil1 C diced potatoes1 teas minced garlic1/4 C onion1 large egg3 egg whites1/3 teas marjoram leaves1/3 teas thyme leaves1 teas parsley dried
Directions
cook potatoes in skillet with oil for 4 minutes covered. Add garlic and onion and cook another 2 or 3 minutes. In a bowl combine eggs and spices. Beat. Pour over the top of potatoes, cover and cook 3 minutes until eggs puff up. Flip and cook another minute or two.
