Lentil Bulgur Salad

Ingredients
3/4 cup boiling water3/4 cup bulgur, dry2 1/2 cup water3/4 cup uncooked lentils1 c. diced green pepper1 c. diced sweet red pepper1/4 cup chopped green onions1/4 cup minced fresh parsley3 oz. fat-free feta cheeseDressing ingredients:1/4 cup cider vinegar2 T. olive oil1/2 T. dried basil1/2 T. dill seed1/2 t. salt1/4 t. pepper
Directions
In a large bowl, pour boiling water over bulgur; let stand until liquid is absorbed - about 30 minutes.
In a saucepan, bring 2 1/2 c. water to a boil. Add lentils. Reduce heat, cover, and simmer until tender, about 15 minutes. Drain.
Add to bowl with bulgur. Let cool completely.
Add peppers, onions, and parsley to bulgur and lentil mixture. In a jar with tight-fitting lid, combine dressing ingredients. Pour over salad and toss. Crumble feta over salad, toss again. Chill 4 hours.
Makes 6 luncheon servings.
