Mini Veggie Quiches

Ingredients
4 eggs2 cups of skim milk1/4 cup shredded Italian cheese (I like Sargento's 6 cheese blend)1/4 cup shredded parmesan1/2 cup feta1/2 cup brown rice flour7 oz fresh spinach1/2 cup chopped bell pepper1 clove garlic1/2 onion, chopped1/4 cup chopped celery1oz sundried tomato, chopped
Directions
Saute pepper, onion, celery and garlic in a large pan until onion is translucent. Add spinach and cook just until spinach wilts. Add sundried tomatoes and mix well. Split spinach mixture into 18 muffin tins.

Blend together eggs, milk, cheese and flour until smooth. Pour over spinach mixture.

Bake at 350 for 50-60 minutes.
