Rumbamel's Ham and Bean Corn Chowder

Ingredients
-1 clove of fresh garlic, minced-1.5 C onion, finely chopped-1/2 C fresh tomatoe, chopped-1 can Celebrity ham, chopped finely-2 cans cream style corn (I used Dierberg's brand which is similar to Cub's nutrition per serving)-1 can white beans, drained and rinsed, I used S&W from Dierberg's-4 oz 1/3 less fat cream cheese, cut in chunks-1/4 C skim milk, I used Aldi brand (it has 90 cal. per serv.)-1/4 C 2% milk Mexican shredded cheese (about 80 cal. per serving)
Directions
--Chop your garlic, onions, tomatoes and ham. Rinse your beans. Open your corn. Measure your cheeses and milk. Chunk up your cream cheese.

--Saute your onions and garlic until tender over medium heat, stirring often so they don't burn. Then add the tomatoes and stir again. Let it cook another minute or two to caramelize a bit. Add the ham and stir. Add the corn and beans and stir again. Let cook for a couple minutes to warm up. SLOWLY stir in the milk, CONTINUOUSLY. Then add in the cream cheese and stir well. Add the shredded cheese and stir again. Serve!

--Makes 7 servings of 1 C each.
