Potatoe chip nachos

Ingredients
One baked potatoe cut into slices (chips)Bocca crumbles (2 servings)Taco Seasoning (I like the reduced sodium)Water (as needed for the bocca meat and seasoning)chopped onionChopped tomatoe (cherry/grape tomatoes are delish)black and/or green olivesSalsaCheese (I like mine without but the man likes his with)
Directions
After cutting the potatoes into "chips" place them on a sprayed (Pam works well) cookie sheet lined with foil. I like to spray the potatoes with pam as well and then lightly season with salt/pepper. Bake for about 30 minutes or until brown. In the meantime, place Bocca crumbles, taco seasoning and water in a sprayed skillet. Cook until done/warm to your liking. After the potatoes are browned, place the bocca mixture, cheese, olives, onions on top of the potatoes and place back in the oven until cheese is melted. After the cheese is melted to your liking, remove from the oven and top with salsa, tomatoes, sour cream, etc. and enjoy!!
