Chicken Enchiladas Suiza with Salsa Verda

1.5 lbs of cooked chicken breast16 oz chihuahua cheese 1/2 onion chopped2 seeded jalapenossalt to tast2 tbsp olive oil 2 garlic cloves12 corn tortillas
bring large teapot full of water on the stove to boil. heat large pot on stove add oil and garlic, saute for one minute add chicken, brown on each side, add onion, jalapenos, saute 2 minutes and add boiling water just to cover. Bring to boil and simmer for 15 minutes. Remove chicken from water & coarsely shred. Dip corn tortillas in salsa verde, add 1/4c chicken 2 tbsp cheese and roll each enchilada seam side down. Once all rolled pour 1 cup of salsa verde & balance of cheese on top of enchiladas and bake for 40 min.
