Fried Pork Chops

4 boneless pork chops (about 1 lb)1 c. cracker crumbs1/4 c. flour1 egg, beatenSalt and pepper2 Tbs butter
Season chops with salt and pepper; dip in egg, then in cracker and flour mixture. Lightly brown chops in 2 Tbs. butter over medium high heat.
Bake chops in a baking pan with tray. Pour water into baking pan. Place chops on tray. Cover with lid or foil and bake at 325 degrees for 1 hour until tender.
Makes 4 servings.
Serve with mashed potatoes and gravy.
